Carrot and Walnut cake


100g walnuts(toasted and chopped roughly)
340 carrots grated
120g apple grated

280g plain flour
1 ½ tsp baking powder
1 tsp bi carb soda
½ tsp salt
1 ½ tsp cinnamon ground

4 eggs beaten until frothy
300g sugar
1 cup veg oil
2 tsp vanilla essence

Cream cheese icing

50g butter room temp
227 cream cheese
200g icing sugar
½ tsp vanilla essence
¾ tsp lemon zest
a few drops of lemon juice


beat eggs unil frothy and add sugar slowly to the egg mix batch at a time, then add oil and van and beat to combine.

Add all dry ingredients to egg mix and

Fold in grated carrot apple and nut mix, and you are done

Bake in a pre heated oven at 180 for 25-35 mins if you are making individual cup cake size... if not I think it takes about 1 ½ hours ish, but check after and hour depending on the oven.

For icing

Beat butter and cheese until smooth add icing sugar slowly ( I just sift it in to the mixture straight) once all sugar is added and mixed in add the rest of ingredients.
