250 grams butter
1 cup golden syrup
1 cup brown sugar
2 egg yolks
2 tablespoons ground ginger
4 tablespoons mixed spice
2 teaspoons bi-carb of soda
5 cups SR Flour


Combine the butter, golden syrup and brown sugar in a saucepan and melt. Remove to a bowl and cool, approx 30 minutes. Stir in the egg yolks and remaining ingredients to form a soft dough. Turn onto a piece of glad wrap and wrap well. Refrigerate and rest for 1 hour. Roll dough into 7-8mm thickness on a well floured bench. Cut the gingerbread into your desired shapes. Place on a greased baking tray. Bake at 180 ̊C for 7-10 minutes until golden. Stand on the baking tray for 10 minutes until firm to move.

To decorate

3 cups icing sugar
100 grams butter, melted
Boling water to form icing

Combine the icing sugar and butter then add the boiling water in small drops. Use your favorite food colouring to colour the icing and place this in a piping bag. Decorate as desired than gift wrap gingerbread for family and friends.
