Lemon cream cheese icing


Serves: 15 
250g cream cheese, softened
65g butter
2 tablespoons lemon juice
2 teaspoons lemon zest
1 teaspoon vanilla essence
5 cups (800g) icing sugar


Beat cream cheese, butter, lemon juice, lemon zest and vanilla together until smooth and fluffy. Add icing sugar in 2 additions. Beat until creamy. Add more icing sugar or juice as needed for easy spreading. Makes about 4 cups. Prep time 10mins
