Lemon Yoghurt Tea Cake

Ingredients: 

Cake

375g (1 ¼ cup) sugar
250g SR flour
250g(1 cup) yoghurt
1 tbs lemon rind
2 tbs lemon juice
120 ml(3/4cup) veg oil
2 eggs
vanilla
pinch of salt

Lemon frosting

¾ cup sugar
¼ cup lemon juice

Method: 

Place flour and sugar in a large bowl.
Then add all your other ingredients.
Mix everything together until all ingredients are combined.
You should be left with a nice smooth batter.
Line a tray with baking paper and bake in pre heated oven 180 degrees for 35 mins or until a skewer comes out clean.

For the frosting just add sugar to lemon juice and spoon over the top of the cake while still hot. Leave to set as a crust before cutting.

It is as simple as that! Lovely with fresh cream as a dessert or just as is!
