Nyika's 4th birthday cake


180g flour Sieved with
70g cocoa
10g baking powder
(three times)

150ml coffee(20g coffee 130 hot water)
2 tsp vanilla
1/3 tsp salt
180g sugar
8 egg yolks
beat together
then add 110ml sunflower and continue to beat until sugar totally dissolved

add flour mixture in to yolk mixture

8egg white
1g cream of tarta (3 pinches)
110 sugar
whisk till soft peaks

fold in egg whites working very gently

bake at 190 until cooked

when cake is cooked, cover tin with a lined(with baking paper) tray and cool cake upside down until totally cooled. Then it can be turned right side up and iced.
