Orange whisky marmalade

Ingredients: 

3 kg oranges sliced and soaked in
6 cups (double the quantity of water) over night

makes : about 5650 kg

makes 24 x 220 jars

Method: 

Then bring the soaked oranges and water to the boil and simmer till soft and cant be broken by a spoon. Then add

3kg (equal quantity of sugar to orange quantity) and broil till reduced by half

stirring to prevent sticking to the bottom of the pan

before bottling add a generous splashing of whisky!! 250 -300 mls
