make 2 batches, 3 if time permits
2 ½ cups plain flour
1 tablespoon cornflour
1/3 cup caster sugar
250 grams butter
½ teaspoon vanilla
Cream butter and sugar, add the plain flour, cornflour and vanilla and knead to form a soft dough.
Wrap in glad wrap and rest for 15 minutes.
Roll out shortbread onto a floured board and cut into desired Christmas shapes. Place onto a greased baking tray and bake at 160 ̊C for 20 minutes.
You may sprinkle the shortbread with caster sugar if you wish to.
Cool shortbread and gift wrap for Christmas treats.
