Ingredients:
180g butter
1 tsp vanilla essence
1 ½ cups caster sugar( 330g)
4 eggs separated
¾ cup self raising flour (110g)
¾ cup buttermilk (180ml)
1/3 cup cocoa powder(35g) or add 35g to te quantity of flour if making place butter cake
Method:
Heat oven to moderate(160 degrees) Beat butter, vanilla and sugar until creamy, add egg yolks one at a time
Stir in sifted dry ingredients and buttermilk
Beat egg whites until soft peaks and fold into cake mixture
Bake for 45 mins to 1 hr. approx, and cool in pan
