Vanilla Cupcakes


2 ¾ cups plain flour

2 tsp baking powder

200g softened unsalted butter

1 ¾ cups castor sugar

4 eggs

1 Tbs Vanilla extract

1 cup milk


Preheat oven tp 170 degrees Line two muffin trays with baking paper

Sift baking powder and flour

In a separate bowl cream butter (1-2 mins) Add castor sugar a third at a time, combining after each addition. After the last addition beat mixture until it is light and fluffy and sugar has almost dissolved.

Add eggs on at a time and beat until light and fluffy and,

Add vanilla and beat until combined

Add 1/3 of the flour to the creamy mixture and beat on low speed until combined. Add ½ the milk quantity and beat on low until combined and repeat until all flour milk is added.

Spoon mixture into cupcake papers, filling each one about ¾ full

Bake for 18-20 mins, or until a skewer inserted come out clean.

Remove cupcakes from tray and cool on wire rack for 30 mins before frosting.
